Vegetable Stir-Fry with Tofu: Healthy and Flavorful
This vegetarian stir-fry is not only quick to prepare but also bursting with vibrant colors and flavors. Perfect for Meatless Mondays or any day when you want something light yet satisfying.
Ingredients
- 1 block firm tofu, cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 2 cloves garlic, minced
- Sesame seeds (for garnish)
Instructions
- Prepare the Tofu : Press the tofu gently between paper towels to remove excess moisture. Heat a small amount of oil in a skillet and pan-fry the tofu cubes until golden brown on all sides. Remove and set aside.
- Stir-Fry the Vegetables : In the same skillet, heat sesame oil over medium-high heat. Add minced garlic and sauté briefly. Toss in the mixed vegetables and cook until they're tender-crisp.
- Combine Ingredients : In a small bowl, whisk together soy sauce and honey. Pour the mixture over the vegetables and tofu. Stir everything together until coated evenly.
- Serve : Garnish with sesame seeds and serve with steamed rice or noodles.
